About the winery
Château des Trois Sautets is the latest addition to the prestigious Palette Appellation d'Origine Contrôlée, created by the three Chaullier brothers in Meyreuil. Rich in its AOC, the Château des Trois Sautets also holds the dual role of goat breeder. Indeed, for twenty years Laurence Chaullier, the mother of the three brothers settled at the gates of Aix and produces organic goat cheeses but above all from the Brousse du Rôve AOP ORGANIC. The wines are worked so as to go perfectly with the cheeses. The estate practices one of the most viable cultivation methods: viti-pastoralism. The goats come to graze in winter on the restanques and the manure is brought to the vines as an amendment.
