About the host
Described as “Italy’s best-kept secret,” Umbria is a rural Italian idyll, a region with exceptional food and wine, rolling green plains, and traditional villages. Here, days pass slowly; life has barely changed in 500 years, with good food and quality time with friends and family.
It was this authenticity and character that inspired the owners to invest in Torre Bisenzio. A dilapidated former farm, steeped in Umbrian charm and tradition, over the years it has regained its place in the region: a working organic farm.
The estate is dedicated to preserving historic native breeds. The white cattle that dot the fields are an ancient breed, raised in Tuscany, Umbria, and Lazio for over 2,000 years. Chianina beef is renowned for its quality and nutritional value, and is used in the preparation of the famous and super “bistecca alla fiorentina”. Torre Bisenzio has been instrumental in increasing the Chianina population in the area, and now boasts a vigorous herd of 125 animals roaming the farm.
With 650 olive trees, five hectares of vineyards and 450 hectares of land, the farm also produces organic vegetables, red and white wines, a fragrant high-quality olive oil and deep red saffron.
